I wanted to like your article, but it was built on a fundamentally false assumption. Wuhan is not, at large, a poor city and people are not eating those foods simply because they can’t afford anything better. They are eating foods that have been a part of their culture, and often pay a premium for the things we would never consider consuming. That is a cultural difference, not an economic one.
